Sibillini Spirits
Negronidei Sibillini
The Italian mountain Negroni
Mountain distillates and aperitifs, born on the ridges of the Sibillini Mountains, poured in equal parts.
Negroni dei Sibillini is the Italian mountain Negroni: the variation made with Gin Vettore, Bitter del Redentore and Vermouth Rosso Bove, distillates and aperitifs crafted by Sibillini Spirits in the Marche, central Italy, on the slopes of the Sibillini Mountains. Three equal parts of 30 ml, served over ice with a twist of orange.
A century of equal parts
Florence, 1919. At the bar of Caffè Casoni, Count Camillo Negroni asks for more character in his Americano: soda out, gin in. Bartender Fosco Scarselli obliges and that request becomes the most famous Italian cocktail in the world.
The formula has never changed: three equal parts, ice, orange. A cocktail this simple is judged by what you pour into it.
Ours comes from up here
Vettore, Redentore, Bove: three peaks of the Sibillini Mountains, three names on our labels. The juniper in the gin grows wild on these slopes, the gentian and orange thyme in the bitter come from the same ridges, the vermouth starts from Vernaccia Nera di Serrapetrona and climbs into the mountains with its herbs. The same mountain, three times.
These are lands of legends: the cave of the Sibyl, Lake Pilato, the Devil's Peak facing the Redentore. Our owl watches over aperitivo hour from up there.
The recipe
A lowball glass, plenty of ice, thirty millilitres per part as tradition demands. Stir, never shake. A ribbon of orange peel, squeezed over the glass, completes the ritual.
30 ml
Gin Vettore
Mount Vettore · 2,476 m
Seven wild botanicals, from Apennine juniper to the Mela Rosa dei Sibillini, a Slow Food Presidium. At 43.8 degrees it carries the mix without losing elegance: the backbone of the glass.
30 ml
Bitter del Redentore
Mount Redentore · 2,448 m
Born from an old amaro recipe: gentian and wormwood bring the depth, orange thyme the citrus freshness. The bitter that supports without covering.
30 ml
Vermouth Rosso Bove
Mount Bove · 2,169 m
It starts from Vernaccia Nera di Serrapetrona, a historic Marche grape. It ages in oak with mountain herbs. The red that holds everything together.
Questions at the bar
Which vermouth goes into a negroni?
A red vermouth with a solid bitter backbone, between 16 and 18 degrees. In the Negroni dei Sibillini we use Vermouth Rosso Bove, born from Vernaccia Nera di Serrapetrona and aged in oak with herbs from the Sibillini Mountains: it stands up to the bitter without covering the gin.
Which gin should you use for a negroni?
A dry gin with juniper up front, able to stay recognisable next to bitter and vermouth. In the Negroni dei Sibillini we use Gin Vettore, distilled with botanicals gathered on the Sibillini Mountains.
What makes it the Italian mountain Negroni?
The whole supply chain lives in the Marche, central Italy: the gin distilled with wild botanicals of the Sibillini Mountains, the bitter with Apennine herbs, the vermouth built on Vernaccia Nera di Serrapetrona, a historic local grape. That is why we call it the Italian mountain Negroni.
